Banana Bread
1 1/2 cups unbleached flour ½ cup whole grain flour 1 ½ teaspoon baking soda ½ teaspoon salt 1 cup raw sugar OR Sucanat 1/3 cup canola oil 4 ripe bananas (about 2 ½ cups), lightly mashed ¼ cup water 1 teaspoon pure vanilla 1 cup chopped walnuts OR pecans Preheat the oven to 350*F. Mix the flours, baking soda, and salt in a small bowl, then set aside. In a large bowl, mix the sugar, oil, bananas, water, and vanilla until combined. Add the flour mixture to the large bowl, and mix until combined. Stir in the walnuts. Spread into non-stick baking pan (sprayed lightly with No-Stick SmartBalance or similar product). Bake about 50 minutes -- a toothpick inserted in center should come out clean.
